How We Do It
Since potatoes need to be hilled as they grow, we had to prep the beds a little differently...
First we had to dig a deep & wide trench down the middle of our beds.
Then we added a little of our compost on the bottom of the trench.
Next we layed the potatoes in the trench and covered them with a little compost and some of the soil we dug out.
Then we waited...
& watered...
& as they started growing we covered them again with soil and compost.
& finally - potatoes :)
What Do I Do With It?
These are best prepared

Meaning Quick & Easy
* Boil them for mashed potatoes or potato salad...
* Roast them:
Poke holes all around potato with a fork.
Place on baking sheet.
Drizzle with olive oil.
Season with salt and pepper.
Bake at 425 F until tender when forked (20-40 mins)
SMASHED POTATOES
Boil potatoes until almost fully cooked. When forked - it should be soft and tender on outside & still hard in the middle.Drain and cool.
Lay potatoes on baking sheet & with the bottom of a glass jar, place it on top of a potato and lightly push the glass down (slightly smash the potato)
Drizzle with olive oil.
Season with salt and pepper.
Bake at 425 F until crispy (15-30 mins)
