Garlic Scapes
Mild and sweet, like chives or scallions, but with a hint of unmistakable garlic flavor.
How We Do It
We planted our Garlic last October in our no till garden for a Summer Harvest.
Garlic is the only crop we grow that takes almost all year. We plant it in the fall & it is ready the following Summer.
Though the garlic won't be ready until the end of the month - the scapes are ready & tasty.
We harvest the scapes in early summer for a couple reasons. #1 they are DELICIOUS #2 If we trim the scape before it blossoms, the garlic can focus more energy into forming the bulb.
What Do I Do With It?
Raw garlic scapes are crunchy like green beans or asparagus, but you can eat scapes raw or cooked, whole or chopped. Use as you would green onion or chives.
Snip into salads, mix into cream cheese, garnish soups, add to fresh vegetable juices that you are blending.
I like to snip a few up and add them to any greens I am quick sauteing. And was thinking about testing 'Pickled Green Beans & Garlic Scapes'??
