Sausage Potato Soup

 

This is a rich and creamy Potato soup. The Potatoes, Sausage and Mushrooms simmered together give it an excellent texture. The chunky vegetables are filling and healthy. Great with Farm Style Crumpets or biscuits as a side or for dipping.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1/2 pound mild Italian sausage
  • 1/4 pound mushrooms, diced (OPTIONAL)
  • 2 carrots, chopped
  • 2 medium yellow onions, diced
  • 5 cloves garlic, minced
  • 10 sm/med potatoes, chopped
  • 6 cups water (or broth)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

 

Directions

  1. In a large pot, add oil and brown the sausage over medium-high heat.
  2. When sausage is browned, add mushrooms, garlic, onion and carrots.
  3. Once the onions have softened, add the potatoes and water/broth.
  4. Bring to simmer, reduce heat, cover and cook 15-30 minutes – until potatoes are soft.
  5. Stir and smash some potato chucks to create a creamier soup. Season with salt and pepper to taste.
