Potatoes O’Brien

Bust out the skillet and channel your inner Irish. Grab that jar of bacon grease out of the fridge or use your favorite high temp oil this Potatoes O’Brien is delicious. Crispy on the outside and tender in the middle. You can go traditional and smother it in cheese or do like I did and just eat it the way it is.

Ingredients

  • 2 tablespoons bacon grease (or oil)
  • 1/2 small bell pepper (I used green, coarsely chopped)
  • 5 medium potatoes (cut into 1/2″ cubes)
  • 1 large yellow onion (diced)
  • 5 clove garlic (finely chopped)
  • Salt and black pepper to taste

Directions

  1. Preheat oven to 400 degrees. While preheat chop your potatoes & veggies.

  2. Heat the bacon grease or oil in a large skillet over medium heat.

  3. Stir in the potatoes and garlic cook for about 5-10 minutes, stirring occasionally to make sure potatoes don’t stick.

  4. Add the bell pepper and onion cook for about 2 minutes, stirring once or twice.

  5. Season with salt and pepper and cook another 3 minutes, stirring occasionally.

  6. Spread the potato mixture evenly in the skillet, or on a large baking sheet. Bake 10-25 minutes until potatoes are golden. You can eat it plain like we did or smother it in cheese, like traditional Potatoes O’Brien. If you add cheese put it back in the oven a bit to melt it. Cool & Enjoy.
