Old Fashioned Strawberry Pie
Buttery Shortbread Pie Crust
Ingredients
- 1/2 c melted butter
- 1 1/4 c flour – I used whole wheat
- 3 T powdered sugar
Directions
- Preheat oven to 325 F.
- Mix everything together in large bowl.
- Once fully mixed, press into 9″ pie pan.
- Since we are making a chilled fruit pie, we will need to pre bake the pie crust.
- Place pie crust in preheated oven and bake for 25 mins – or until the edges start to brown & the crust looks more matte than shiny.
Fresh Strawberry Filling
Ingredients
- 1 c mashed strawberries
- 5 c sliced strawberries
- 1/2 – 1 c sugar – we used raw sugar
- 3/4 c water
- 3 T cornstarch
- 1 t lemon juice – or other citrus juice (we used grapefruit)
- 1 T butter
Directions
- Place sliced strawberries into pie shell & set aside.
- In a large saucepan, mix together the mashed strawberries, water, cornstarch, lemon juice & sugar. I’d start with 1/2 c. then mix and taste test – adding more depending on what you like.
- Bring to boil over medium/high heat and cook until thickened (1-2 mins)
- Pull off heat & stir in butter until melted – set aside and let coll for 1 hour.
- Once cooled, pour strawberry sauce over sliced strawberries in pie pan.
- Refrigerate & let set for 4 hours.
- Serve with whipped cream.
