Loaded Broccoli Cheese & Bacon Soup
Ingredients
- 3 tablespoons unsalted butter
- 6 slices of bacon, sliced 1/4-ish” thick pieces
- 15 small potatoes, 1/2″ cubes
- 6 cups chopped broccoli – stalk & all
- 1 medium yellow onion, sliced thin
- 3 cups water (or stock, if desired)
- Salt and freshly ground black pepper, to taste
- 1 teaspoon dried mustard
- 1 cup cheese (for topping) We like extra sharp white cheddar :)
Directions
- Melt butter in a large stockpot or Dutch oven over medium heat.
- Add bacon, onion and potatoes. Cook, stirring occasionally, until tender, about 6-8 minutes. Stir in garlic until fragrant, about 1 minute.
- Stir in water or stock; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer for 15-25 minutes.
- Serve & enjoy.
