Ginger Shiitake and Asparagus Stir Fry
Fresh Asparagus marks the beginning of spring. Mushrooms start popping up from the rain and warmth. Filling but refreshing the Shiitake adds a creamy texture and semi sweet almost coconut flavor to the mix. Paired with the warm flavors of the ginger and unique earthiness of fresh asparagus make this stir fry is perfect for those cool spring nights.
Ingredients
- 2 Tbsp coconut oil
- 1lb asparagus, trimmed and cut into 1″ pieces
- 1/2 lb sliced shiitake mushrooms
- 1 onion, chopped
- 4clovesgarlic,minced
- 1(1-inch) piece ginger, grated
- 1 tsp sesame seeds
- 2 Tbsp water
- 1 Tbsp Soy sauce
- Salt and Pepper to taste
Instructions

Heat the oil in a skillet over medium high heat and cook asparagus, mushrooms, and onion; stirring occasionally, for 3 minutes.

Add the garlic and ginger and stir-fry until the asparagus is crisp-tender, about 1 minute.

Stir in water, scraping the bottom of the pan, add soy sauce and season to taste with salt and pepper.
