Cabbage Roll Soup
Like a Cabbage Roll in a bowl. Another super easy cold weather favorite for me. Great for those long days when you still want to eat good food but don’t want it to take forever. You could absolutely exchange the ground beef for sausage or perhaps another type of cooked meat if you so desired, after all cooking is an art to be explored by the senses.
INGREDIENTS
- salt and pepper to taste
- 1/2poundground beef
- 1/4 lb mushrooms diced
- 2onionsfinely diced
- 5 cloves minced garlic
- 1/2 medium head chopped cabbage
- 4carrotspeeled, quartered and sliced
- 6cups water (or broth)
- 6 oz tomato paste
- 2cupsuncooked brown rice
INSTRUCTIONS

Heat the olive oil in a large pot over medium high heat. Add the ground beef and season with salt and pepper.

Cook, breaking up the meat with a spatula, until beef is browned, approximately 4-5 minutes. Add the mushrooms, onions and garlic cook for 2-3 minutes.

Add the cabbage, carrots, broth, rice and tomato paste to the pot. Season with salt and pepper to taste.

Bring to a simmer and cook for 25 minutes or until rice is tender.
- Serve & enjoy.
