Pan Fried Oyster Mushrooms & Onions
I love using the cast iron skillet. Just like my grandma used to do. Don’t worry though fried oyster mushrooms is much better then liver and onions that she used to make, but still has lots of vitamins and minerals; including potassium, magnesium, and folate. If liver and onions is your thing – I’m not judging but I’ll stick with the mushrooms for now.
Ingredients
- 1 Tablespoon extra virgin olive oil
- 1/2 pound oyster mushrooms roughly sliced or diced (you can add more depending on how mushroomy you like it)
- 1 yellow onion, sliced
- salt and pepper to taste
Instructions

Heat the olive oil in a large, heavy skillet over medium high heat.

Spread the mushrooms out in a single layer in the pan. Cook, undisturbed for 3-5 minutes until they start to brown.

Stir the mushrooms, add the onions and cook for another 3-5 minutes until browned all over.

Season with salt and pepper to taste. Enjoy!
