Sweet Potato Bread Twists

Simple Roll. Fluffy and delicious. We used it to make pizza ‘bagel’ rolls & it was to die for… Omg so good.

Ingredients

  • 3 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon nutmeg
  • 2 1/4 teaspoon yeast
  • 1 cup mashed sweet potato
  • 2/3 cup water (or reserved water from boiling sweet potato)
  • 1/8 cup honey
  • 2 Tablespoons butter (melted)
  • 1 egg

Directions

1. Cut sweet potato into small cubes, add to small pot, cover with water and cook over medium heat for 30-45 minutes.

2. In a large bowl mix together flour, baking powder, salt, nutmeg and yeast.

3. Once sweet potatoes are cooked, drain water (reserving 2/3 cup of liquid), mash potatoes and add 1 cup to small bowl.

4. Add water (or reserved water), maple syrup and melted butter. Mix until well combined.

5. Add wet mixture to dry mixture and mix.

6. Add egg and mix until dough becomes soft and not sticky, adding more flour if necessary.

7. Cover and let sit in warm place for 1 hour or until its double its size.

8. Gently shape and place on greased baking sheet. Cover and let sit another 45 mins. To shape divided dough into 8 equal balls. Taking a ball divide it in half and roll each half out like a snake until they are about 10-12″ long. setting them side by side, one end together, twist the two together and pinch the end again. then roll one end into the middle forming a circle. 

9. Preheat oven to 350 degrees. Bake for 15 minutes pull out, brush with butter (if desired)  and bake another 5-10 minutes.
