Whole Wheat Pizza Dough

Our favorite: 1/2 Pepperoni & 1/2 Pepperoni with Mushrooms.

 

 

Ingredients

 

Whole wheat pizza dough

  • 1 cup warm water
  • 1 T sugar
  • 1 T olive oil
  • 2 ¼ t yeast
  • 2 ¾ cups white whole wheat flour or regular whole wheat flour (I like to do a mix of 1 1/4 cups white wheat & 1 1/2 cups regular wheat)
  • ¼ cup grated Parmesan cheese
  • 1 t salt

Sauce

  • 6 oz tomato paste + 1 1/2 cans of water
  • 1 T oregano
  • 1 T Italian seasoning
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t salt
  • 1 t sugar
  • 1/4 t black pepper
  • 1/4 t crushed rosemary

Toppings

  • about ⅔ cup pizza sauce of choice.
  • 2 cups shredded low-moisture whole milk mozzarella cheese
  • Additional toppings of choice** we like pepperoni & mushrooms.

 

Directions

    1. Preheat oven to 500 degrees Fahrenheit with a rack in the upper third of the oven.
    2. Whisk water, sugar, oil and yeast in a liquid measuring cup or small bowl. Allow yeast to proof for 5 minutes. It should puff up some by then.
    3. Mix flour, Parmesan, and salt in large bowl until combined.
    4. Mix wet into dry and mix until shaggy dough forms.
    5. Dump the dough onto a floured work surface and quickly knead dough a few times until it comes together. Let sit and rest 30 mins.
    6. Divide dough in Half – Roll out onto a lightly greased baking pan; about 11 inches in diameter. For best results, roll the dough out about as thin as reasonably possible. Aim for even thickness rather than a perfectly round shape. Brush the outer 1-inch of the dough with a light coating of olive oil.
    7. Add pizza sauce of your choice. Sprinkle with cheese and toppings.
    8. Bake on the top rack until the crust and cheese are lightly golden, rotating halfway, about 10 minutes for cheese pizza and 12 minutes for pizza with additional toppings. Sprinkle with Micro Arugula or Fresh Basil & serve.
