100% Whole Wheat Sweet Potato Bread

Great sandwich bread. Fluffy and delicious.

Ingredients

  • 3 cups whole-wheat flour, I used Bob’s Red Mill 100% Whole Wheat
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 1/4 teaspoon yeast
  • 1 cup mashed sweet potato
  • 2/3 cup water (or reserved water from boiling sweet potato)
  • 1/4 cup 100% pure maple syrup
  • 2 Tablespoons butter (melted)
  • 1 egg

Directions

1. Cut sweet potato into small cubes, add to small pot, cover with water and cook over medium heat for 30-45 minutes.

2. In a large bowl mix together flour, baking powder, salt, nutmeg and yeast.

3. Once sweet potatoes are cooked, drain water (reserving 2/3 cup of liquid), mash potatoes and add 1 cup to small bowl.

4. Add water (or reserved water), maple syrup and melted butter. Mix until well combined.

5. Add wet mixture to dry mixture and mix.

6. Add egg and mix until dough becomes soft and not sticky, adding more flour if necessary.

7. Cover and let sit in warm place for 1 hour or until its double its size.

8. Gently shape and place in greased bread pan. Cover and let sit another 45 mins. 

9. Preheat oven to 350 degrees. Bake for 25 minutes pull out, brush with butter (if desired), cover with foil (to prevent over browning) and bake another 10-15 minutes.
