Sausage and Kale Pasta

Delicious, quick & simple. Perfect for those days when you are tired & hungry. I also love the flexibility of this recipe. Add as much chopped greens as you would like. Any kale can be used, we used Dinosaur Kale (Lacinato kale) but you can also use other greens or a mix of a few. I have made it with kale and mustard and it was so good.

 

INGREDIENTS

  • 1/2 box pasta
  • 2 1/2 cups fresh chopped kale
  • 2 tbs. extra virgin olive oil
  • 1/2 lb. sausage
  •  3-6 garlic cloves, minced
  • salt and pepper to taste

INSTRUCTIONS

  1. Bring a pot of water to a boil.
  2. In a large skillet, heat the oil over medium heat. Cook the sausage, breaking up into small pieces until the sausage is browned, about 8 minutes.
  3. While sausage is cooking – start your pasta. Once your pot of water is boiling, cook pasta according to package directions – we like ours al dente and tend to cook for about 5-7 minutes.
  4. Once sausage is cooked, add the garlic and sauté for about 30 seconds. Add the kale and toss to coat. Turn off heat.
  5. Once pasta is ready, drain it, reserving 1 cup of the liquid. Stir in sausage and kale mixture and slowly add reserved liquid, 1/4 cup at a time until desired. Add salt and pepper to taste. Serve.
