Homemade Pretzel Bread Recipe
This Pretzel Bread takes a little bit because you have to let it rise but it’s pretty simple plus good whole wheat pretzel bread is hard to find. If you have never made pretzel bread before I’m going to let you in on a secret. Baking Soda water. Commercial bakers often use lye water to boil their breads in but I opt for something a little more mellow. Baking Soda water. It might sound a little strange at first to boil your bread in soda water before you bake it but it gives the crust it’s chewy pretzel texture.
Ingredients
- 1¼ cups warm water
- 2 Tablespoon raw sugar
- 1 Tablespoon Yeast
- 2 tsp salt
- 3½ cups whole wheat flour
- Water (for boiling)
- 1-2 Tablespoons baking soda (for boiling)
Directions
- In a large bowl, whisk together the warm water, sugar and yeast. Let rest 10-15 minutes or until frothy/foamy.
- Add salt and 1 cup of flour & mix well.
- Slowly incorporate the remaining flour, 1 cup at a time, Thoroughly mixing & eventually kneading until all dough has been added.
- Transfer the dough to a lightly greased bowl and cover with a damp towel. Let the dough rise in a warm place until double, about 2 hours.
- Once the dough has risen, punch it down and transfer it to a lightly floured surface. Divide into 8 equal pieces and shape as desired. We like to make them kinda like a mini hoagie, but you can also make them round or shape them like a bagel. Cover again with the damp towel and let the dough rest for 10 – 15 minutes.
- While resting, prepare a baking sheet with a piece of foil lightly greased and preheat the oven to 450°F.
- Meanwhile, bring a medium/large pot of water to a boil, and sprinkle 1-2 Tablespoons of baking soda into the water. Gently place the bread into the boiling water, I only do one at a time, but you could do a few. Let the bread boil for 45 seconds before flipping it over to boil on the other side for an additional 45 seconds. Transfer the bread to the prepared baking sheet.
- Bake for 15-20 minutes. Let cool.
