Skillet Pork Pot Pie

This Skillet Pork Pot Pie is hearty, simple and delicious. A little bit of work but Straight forward and totally worth it, for this old school, baked in a skillet pie. The whole wheat homemade crust might seem tricky at first but once you get it down it’s a simple, flaky, super tasty pie crust. If your not feeling fancy you don’t have to make a little pig for the top. But I was feeling fancy so I did.

 

Ingredients

4 medium/large potatoes

1/3 lb Ground Pork

5-6 cloves garlic, minced

1 yellow onion, diced

1 T Butter

Bunch of mustard greens, thinly chopped

1 teaspoon ground allspice

salt & black pepper to taste

Whole wheat pie crust – You can use premade crust too.

– 2 1/4 cups whole wheat flour

– 1 cup cold butter, chopped

– 1 Tablespoon apple cider vinegar

– 1/3 cup cold water

 

Directions

Pie Crust  

  1. In a measuring cup, combine the water, vinegar, and salt. Mix until the salt dissolves. Put the measuring cup in the freezer. Let this chill for a bit and get your flour ready.
  2. In a large bowl add your flour and cold butter. Using a fork, chop, mix and press the butter into the flour until it resembles a crumbly meal.
  3. Add your cold vinegar water to your flour mixture and continue mixing with a fork until it is well combined and moist enough to press into a ball.
  4. Turn the dough out on onto a piece of wax paper. Use your hands to press the ball into a large disc. Cut the disc in half, wrap each half in wax paper, press each piece into a disc and refrigerate for at least half an hour. While this chills in the fridge we will start our filling.

 

 

 

Pot Pie Filling

  1. Chop and add potatoes to large pot. Boil, simmer & cook until potatoes are tender. About 15-20 mins.

  2. While your potatoes are cooking. Heat a large skillet on medium heat and add your butter and garlic. Cook a minute or two and then add your ground pork. Cook until pork begins to brown. About 10-15 minutes. Time to check your potatoes.
  3. Once pototoes are cooked – drain out 75% of the cooking water. Keeping a little water with the potatoes start to mash them, adding a little salt and pepper to taste. Set aside until pork is done. ** Now is a good time to pull out your pie dough to get it ready **
  4. Once the pork is done add chopped onion and saute 3-5 minutes until edges begin to get translucent. Add chopped mustard and ground allspice – mix until well combined.
  5. Now its time to mix it all together and make a pie. Mix your pork mixture into the mashed potatoes. Gently stir/fold until fully combined. Set aside and start your dough.

Making the Pie

  1. Preheat your oven to 375.
  2. On parchment or wax paper, roll out your first dough disk to the size of your baking dish – adding 2-3 inches around the edges for your sides.
  3. Flip your baking dish atop of rolled dough, carefully slip your hand underneath the dough  and gently flip upright. Press and straighten dough along bottom and sides, then carefully pull off paper. Using a fork poke few holes on the bottom. Now it is time to add your Pie Filling. Making sure to spread it out.
  4. On parchment or wax paper, roll out your last dough disk to the size of your baking dish. Gently flip the crust into the top of your pie. Trim any excess crust, tuck and crimp the edges. Make a couple cuts on top and bake 20-25 minutes until crust is golden.
  5. Let cool for 10-15 minutes. Slice & serve
